Astakomakaronada (Greek Lobster Pasta)




I first tasted this unforgettable dish while travelling through Greece. It wasn’t in a fancy restaurant or part of a guided food tour—it was in Mykonos, away from the bustling tourist crowds, in a humble fishing village tucked off a beaten path. The small seaside taverna had no sign, just a few tables shaded by grapevines and the gentle sound of waves lapping nearby. The cook, who looked like he had been feeding fishermen for decades, served up this steaming bowl of lobster pasta—Astakomakaronada—and it was love at first bite. Sweet lobster, briny sauce, just enough heat, and pasta perfectly slicked in a tomato-white wine broth enriched with a sweet taste of the ocean. I’ve been chasing that flavour ever since, and this is my version of that magical, sun-soaked plate by the Aegean Sea.

Ingredients

  • 2 whole live lobsters (about 1.5–2 lbs each) or 4 lobster tails

  • 1 package (450g) of linguine or spaghetti

  • 4-6 tbsp olive oil

  • 1 small red onion, finely chopped

  • 4–6 garlic cloves, thinly sliced

  • 1–2 fresh tomatoes, grated (or 1 cup canned crushed tomatoes)

  • 1 tbsp tomato paste

  • 1/2 tsp chili flakes (optional, to taste)

  • 1/4 cup dry white wine

  • 1/4 cup of bottled clam juice

  • Salt and freshly ground pepper, to taste

  • 1/2 tsp sugar (to balance the acidity)

  • A handful of chopped fresh parsley

  • Zest of 1 lemon

  • Juice of 1/2 lemon

Instructions

  1. Cook the Lobster
    Bring a large pot of salted water to a boil. Add the lobsters and cook 8–10 minutes until shells turn bright red. Remove and let cool.
    (If using lobster tails, cook for 5–6 minutes.)
    Reserve about 2 cups of the lobster water. Remove the meat from the shells and chop into bite-sized pieces.

  2. Cook the Pasta
    Cook the pasta until al dente. Reserve 1 more cup of pasta water before draining.

  3. Build the Sauce
    In a large skillet or deep sauté pan, heat olive oil over medium heat. Sauté onion until soft (about 3–4 minutes), then add garlic and cook 1 minute more. Stir in tomato paste and cook until it deepens in colour, then add grated tomato, chili flakes, sugar, salt, and pepper. Simmer for 8–10 minutes.
    Add the white wine and clam juice. Let it simmer another 5 minutes, allowing the flavors to meld and the sauce to thicken.

  4. Combine and Finish
    Add the lobster meat to the sauce along with a splash of lobster water or pasta water. Simmer very gently to warm the meat without overcooking it.
    Add the drained pasta and toss gently, adding more reserved water if needed to create a silky consistency.
    Stir in lemon zest, parsley, and a squeeze of lemon juice if desired.

  5. Serve
    Serve immediately, topped with extra parsley and a drizzle of good olive oil. Pair with crusty bread and a crisp white wine.
