Honey Roasted Baby Carrots with Muhammara & Dukkah

1. Parboil & Roast the Carrots:

Preheat oven to 400°F (200°C).

Boil baby carrots in salted water for 2–3 minutes. Drain and pat dry.

Toss with olive oil, honey, salt, and pepper.

Roast for 20–25 minutes, turning halfway, until tender and golden.

2. Make the Muhammara:

Blend red peppers, walnuts, garlic, bread crumbs, molasses, Aleppo pepper, red pepper flakes, sugar, cumin, and salt in a food processor.

Drizzle in 2 tbsp olive oil while blending. Add the rest once smooth to emulsify. Adjust seasoning to taste.

3. Make the Dukkah:

Toast coriander and cumin seeds in a dry skillet for 1–2 minutes. Let cool.
